Hi guys! This week I am making Paneer Recipes. If any of you don’t know what paneer is then this is a treat. Paneer is Indian cottage cheese! It’s basically a farmers cheese that can be purchased in an Indian grocery store or easily made at home. Paneer is a cheese that does not melt so it’s perfect for lot’s of different Paneer Recipes or recipes that require a cheese much like feta or farmers cheese. I find it to be a very versatile product. Most Paneer recipes that I am familiar with come from India. I have been watching many of my favorite Indian cooks on Youtube for months and one of them is owned by a girl named Aditi and her channel is called the eateastindian channel. I was watching this channel week after week as she made different Paneer Recipes. This is how I was introduced to paneer. There are so many Paneer recipes in India that it’s mind boggling. I didn’t even know that cheese was something used in Indian cuisine until watching the eateastindian channel on Youtube.

I told Aditi that I was going to have to make some paneer recipes of my own. She had been watching my channel and thought that me making some Paneer Recipes would be a great idea. I asked if I should make some traditional Paneer Recipes or should I come up with something on my own. She told me to go ahead and make some of my own Paneer Recipes as the world is full of traditional Indian Paneer Recipes.

So I had to think long and hard this week as to how I would like to prepare my Paneer Recipes. So this week I am going to make a pan seared paneer encrusted with za’atar spice topped with a nice Dijon mustard dill cream sauce. Then I will make a paneer orzo pilaf with oregan, basil, sundried tomatoes, almonds, garlic and shallots. Yum! I will also make a spring vegetable and paneer pasta dish of pan seared paneer mixed into sauteed zucchini, yellow squash, shallots, garlic, tomato along with some herbs and this will either be served on linguine. I am sure these Paneer Recipes will be pleasing to the eye’s and palate.

I really struggled a bit this week trying to come up with these Paneer Recipes but it truth after watching videos on how to make paneer and how to make a multitude of Paneer Recipes it has just all come together for me. paneer is a very versatile food and Paneer recipes are just about as endless as the imagination. Just because paneer is a cheese used in India does not mean that this delicious cheese product cannot be used in the recipes of other nations. I have also found that it’s cheaper to make paneer cheese or cottage cheese or even Feta cheese at home rather than buying it at the local market. Indian Cuisine: Paneer Recipes: My Paneer Recipes

Ingredients

    Ingredients For Paneer Orzo Pilaf
  • 1 Package of orzo cooked just at al dente'.
  • 1 Cup of paneer cubed into quarter inch pieces.
  • 1-2 Tbsp. fried garlic.
  • If you don't have fried garlic then 2-4 cloves of fresh minced will do.
  • 1-2 Tbsp. fried shallots.
  • If you don't have fried then mince 1-2 shallots will work well.
  • 1/2 to 3/4 cup roughly chopped mushrooms. Any kind will do.
  • 1 Tsp. of dried oregano.
  • 1 Tsp. dried basil and stir well.
  • 2-3 Tbsp. sun dried tomatoes.
  • 1/2 to 3/4 cups slivered almonds.
  • 1-2 Tbsp. olive oil
  • Salt and black pepper to taste.
  • Optional: Crushed red pepper flakes to taste.
  • Ingredients For Spring Vegetable And Paneer Pasta
  • 1 Lb. of pasta. I used linguine but any kind will work just fine.
  • 1 Cup of paneer cut into 1/4 inch sized cubes.
  • 2-3 Zucchini sliced 1/4 inch thick.
  • 2-3 Yellow squash sliced 1/4 inch thick.
  • 1 Cup of grape tomatoes.
  • 2 shallots finely minced.
  • 4 or more cloves of garlic finely minced.
  • 2-3 Tbsp. capers.
  • 1 Cup of Kalamata olives.
  • Ingredients For Pan Seared Paneer :
  • 1 Piece of paneer cut into a large rectangle or square.
  • 2 Cloves of garlic finely minced.
  • 1 Shallot finely minced.
  • 1-2 Tbsp. olive oil for frying.
  • Salt and black pepper to taste.
  • 2 Tbsp. Za'tar spice for crusting surface of paneer.
  • Optional red pepper flakes to taste.
  • Ingredients For Creamy Mustard Dijon Dill Sauce:
  • 1 Cup sour cream.
  • 3 Tbsp. finely chopped red onion.
  • 2 Tbsp. smooth or course Dijon mustard.
  • 3 Tbsp. dried dill weed or more if desired.
  • Salt and black pepper to taste.
  • Combine all of these ingredients in a bowl and mix together well.
  • Ingredients For Za'atar Spice:
  • 2 Tsp. chopped fresh oregano.
  • If you don't have fresh then dried bulbs will work fine.
  • 2 Tsp. sumac.
  • 2 Tsp. ground cumin.
  • 2 Tsp. toasted sesame seeds.
  • 2 Tsp. kosher salt.
  • 2 Tsp. freshly ground black pepper.
  • 1 Tsp. marjoram.
  • 1 Tsp. thyme.
  • Combine the chopped fresh or dried oregano, sumac, ground cumin, and toasted sesame seeds. Stir in kosher salt and freshly ground black pepper. Done! That's it! This mixture can be made up to two weeks ahead of time. Store in an airtight container and keep in a cool dark place.

Instructions

    Method For Paneer Orzo Pilaf
  1. Cook your orzo pasta to just al dente.
  2. Drain orzo and then put in covered container and set aside.
  3. While orzo is cooking cut up your paneer into quarter inch sized cubes.
  4. In a saute pan add some olive oil and pan fry on medium high until paneer is golden brown.
  5. Once done set the paneer aside.
  6. In a saute pan:
  7. Add olive oil.
  8. Heat to medium.
  9. Add fried garlic. If you don't have fried 4 Cloves finely minced will do.
  10. Add fried shallots. If you don't have fried mince 1-2 shallots finely to taste will do.
  11. Sautee garlic and shallots for 1 minute.
  12. Add roughly chopped mushrooms and saute until soft. about 1 minute.
  13. Add 1 Tsp. dried oregano and 1 Tsp. dried basil and mix in well.
  14. Add the sun dried tomatoes and mix in well for about 1 minute.
  15. Add the slivered almonds mix in about 1 minute.
  16. Add salt and black pepper to taste.
  17. Add optional red pepper flakes taste if desired.
  18. Now add your orzo into the saute pan mixture and stir in well
  19. Now add your paneer into the saute pan and cook entire mixture on medium for 1-2 minutes.
  20. Put pilaf in a bowl and serve family style.
  21. Method For Vegetable And Paneer Pasta
  22. In a saute pan cook your paneer until golden brown then set aside.
  23. Cook pasta until al dente.
  24. In a large saute pan saute your zucchini and yellow squash for 1 or 2 minutes.
  25. Now add your grape tomatoes and saute for a minute or so.
  26. Add garlic and shallot and mix in/saute.
  27. Add oregano and basil and mix in well.
  28. Add capers and Kalamata olives.
  29. Cook this mixture on medium high for 1-2 minutes.
  30. Now add the paneer and saute quickly for 1-2 minutes until whole mixture is nice and hot.
  31. Put pasta on a large serving tray or charger and top with the vegetable and paneer mixture.
  32. Serve family style.
  33. Method For Pan Seared Paneer
  34. In a saute pan add some olive oil heat it up on medium.
  35. Add garlic and onions and saute for 2 minutes to flavor the oil.
  36. Add some optional red pepper flakes for heat and flavor if desired.
  37. saute 1 minute.
  38. Now add paneer slab and saute until golden brown on one side.
  39. Add black beans and chickpeas and saute 1 minute to get them hot.
  40. Turn paneer slab over and cook until golden brown.
  41. Remove and plate paneer.
  42. Add za'atar spice on top of paneer.
  43. Sprinkle some za'atar on black beans and chickpeas.
  44. Add large dollop of Creamy Mustard Dijon Dill sauce to center of the paneer slab and serve.
